The Chop House opened its doors in December 2009, offering a new food concept within a Dublin 4 pub! Our focus is to produce high quality dishes using the best of Irish produce. Stuart Heeney is a Dublin native and started his culinary career in the Michelin Star, Chapter One where he trained under Ross Lewis. He studied at the School of Hospitality Management and Tourism, Cathal Brugha Street, which has been synonymous with the hospitality and catering industry in Ireland since 1941.
Over the past number of years Stuart has worked in The Old Dublin under Head Chef Eamonn Walsh, Sale Pepe in Malahide and The Grand Hotel in Malahide. He has also worked in Germany for An Bord Bia promoting Irish Food abroad.
Stuart started in Clontarf Castle in September 2012 as Executive Sous Chef and was quickly promoted to Executive Head Chef. He has been developing the dining experience at Fahrenheit Restaurant to include new seasonal menu’s in Fahrenheit Restaurant which have been awarded with 2 AA Rosettes in July 2015.

Since we opened Hartley’s in 2007 we are delighted to have seen it become an integral part of Dun Laoghaire’s vibrant waterfront scene. The Victorian railway station, the original ticket hall of the Kingstown Station, with its beautiful high ceilings is, to us, one of the best dining rooms in the country. And in the late spring, as soon as the weather gets warm enough, we open up the terrace and outside cocktail bar, and it becomes the perfect daytime venue for lazy lunches and evening pre-dinner drinks.
The menus are diverse but uncomplicated. Ross and Alan run the kitchen by focusing on local, seasonal and un-fussy ingredients. Koh is divided into three parts. The first is a spacious outdoor terrace for al fresco dining – or just relaxing with a drink and watching Dublin city go by.
(And please no jokes about the Irish weather. We’ve already told most of them ourselves!)
Stepping inside, you enter our stylish cocktail bar. Its serene décor of restful browns and reds is augmented by a great selection of cool music to match the ambience.
This can vary from the best of smooth jazz or soul to something a little more upbeat, depending on the time of day or evening.
In our restaurant, a prominent theme is walnut, in our tables and flooring. This combines perfectly with deep reds and dark greys in the surrounding fabrics to create a warm rich atmosphere.
The restaurant seats 90 people. This includes room for fourteen in our “Inner Thai” private dining area at the back. Most popular of all are our two intimate – dare we say, romantic – opulently appointed alcoves, both of which can accommodate up to eight diners.
Dublin born Derry trained in the classical French tradition in the Man Friday in Kinsale. The Silk Road Cafés food is based on the Middle Eastern and Mediterranean cuisine and reflects some of the countries represented in the museum.
